It's Brinner Time ~ Homemade Griddle Pancakes

At the Roberts house, we love to have Brinner, our given term for breakfast for dinner.  Our kids love to hear "Brinner' when they ask "What's for dinner"?

We used to buy these great big bags of pancake mix at Sam's (some parts of the country have Costco).  I think they were like 10 pound bags!  One morning we had no pancake mix and Shawn made his own for us...we've not once even thought of going back to store bought pancake batter...not after eating these babies.  They are so yummy and so much better than any mix, and they are super easy to make.
We cook them with a pat of butter so they're like what my Grandma called Griddle cakes, crispy on the outer edge and the inside is a light and fluffy heaven.
  Shawn has been making homemade syrup for longer than we've been married and it is equally tasty!




Home Made Pancake Batter

1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
1 tesponn salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

In a large bowl mix the dry ingredients.  Make a well in the center and add the remaining ingredients.  Mix until smooth.
Heat a lightlly oiled griddle (we use a pat of butter to make these crispy on the oustide...yum) over medium high heat.  Scoop the batter onto the griddle, about 1/4 cup for each pancake.  Brown on each side.  If you want you can add another little pat of butter after lifting the pancake, before flipping, so it will have that crispy edge on each side.

Shawn's Homemade Syrup

1 cup brown sugar
1 cup sugar
1 Tablespoon Vanilla (We use pure Mexican vanilla as it has a stronger, richer flavor)
2 Tablespoons butter

Stir in sauce pan and allow to come to a boil.  Allow to simmer until sugars are dissolved.  This syrup is not super thick but does thicken more as it cools.  It's yummy!  Sometimes we add cinnamon, maple...whatever you want!

  9. These look great! I use a vintage recipe for whole wheat griddle cakes, I posted about in the winter, and we love them. They are so much better than a mix for sure! I'll have to try your recipe!!
