Grilled Tequila Lime Chicken & a Winner

Grilled Tequila Lime Chicken

As usual, I double this recipe.
4 chicken breasts or the equivalent in chicken breast tenders 
(I have prepared both ways)
1 cup shredded cheddar/Monterey jack cheese

Marinade:
1 C water
1/3 C Teriyaki sauce
2 T lime juice (I use fresh juice, juice of 1/2 lime is about 2 T)
3 tsp minced garlic 
1 tsp liquid smoke
1/2 tsp salt
1/4 tsp ground ginger
1/4 tsp tequila

Add chicken to bowl, cover and chill for 3-4 hours, stirring every hour or so

Sauce: (this is equally delicious as a dip for tortilla chips!)
1/2 C real Mayonnaise
1/2 C sour cream
2 T milk
1T minced tomato
3 tsp vinegar
2-3 tsp minced onion
2-3 tsp minced canned/jarred jalapeno slices
1/2 tsp dried parsley
1/2-3/4 tsp Tabasco sauce (I use Chipotle)
1/4 tsp salt
1/4 tsp paprika
1/4 tsp dried dill weed
1/4 tsp cayenne pepper
1/4 tsp cumin
1/4 tsp chili powder
couple dashes of garlic powder
couple dashes of coarse ground black pepper

Mix all ingredients well and chill until ready to use...and again...it is great as a dip! 

You'll want to fire up your grill and cook the chicken breasts for several  minutes on each side, brushing each a few times with the marinade so as to slightly char them on the outside while leaving the inside tender and juicy, looking like these:

Turn your oven to the broil setting.  Place the cooked chicken breasts in a baking dish and generously cover with the sauce.  You want it oozing with this sauce!

Never miss an opportunity to enlist child labor ;-)  Top each breast with a mound of shredded cheddar/jack cheese blend.



Place the dish in your over under the broiler just long enough to allow the cheese to slightly brown and bubble.

Serve over crushed tortilla chips and top with a little lime zest for color.  This is some seriously good eatin'!  Shawn makes a great black bean and corn salsa we serve on the side.  We've also served Spanish rice and a salad with this dish.  Try it soon, I know you'll love it!

  13. This is my favorite dish to eat at Applebee's, so I would LOVE to fix it at home. That's a long list of ingredients (for me), but it would SO be worth it for this delicious dish!! I've bookmarked to try out SOON!!
